  • For over 40 years, Luis Anibal Calderon has cultivated coffee in Huila, Colombia, but in 2012, financial hardship led him to take a new path—specialty coffee. He shifted his focus to rare and exotic varietals, transforming his farm, Villa Betulia, into a hub for innovation and quality.
  • This microlot is 100% Papayo, a rare mutation originating in Acevedo, Huila. Named for its papaya-shaped, orange-hued cherries, this varietal stands out for both its appearance and flavour complexity. The cherries are harvested at peak ripeness, then undergo a 30-hour underwater fermentation to enhance sweetness and depth. After fermentation, they are pulped, gently washed, and dried under temperature-controlled conditions to preserve clarity and balance in the cup.
  • Luis Anibal’s dedication to pushing boundaries in Colombian coffee is evident in every step, making this lot a testament to both tradition and innovation.
